Introduction

Ingredients
Meatloaf:
- 1 1/2 pounds ground beef
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup whole milk
- 1/2 cup finely diced onion
- 1/4 cup finely diced bell pepper
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large eggs
- 1/2 cup marinara sauce
Topping:
- 1 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- Fresh basil leaves for garnish
Instructions
- Preheat oven to 350°F (175°C). Combine breadcrumbs and milk in a small bowl and let sit for a few minutes.
- In a large mixing bowl, combine ground beef, soaked breadcrumbs, Parmesan, onion, bell pepper, garlic, parsley, basil, oregano, thyme, salt, pepper, and eggs. Mix gently to combine without overmixing.
- Shape the mixture into a loaf and place in a greased baking dish. Pour 1/2 cup marinara sauce over the top.
- Bake uncovered for 45 minutes.
- Remove from oven, spread the remaining marinara sauce over the top, and sprinkle with mozzarella cheese.
- Return to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (71°C).
- Let rest for 5-10 minutes before slicing. Garnish with fresh basil leaves and serve warm.
