Ingredients

  • ½ tea glass (50 ml) vegetable oil
  • 1 tbsp (20 grams) granulated sugar
  • 1 tbsp (10 grams) dry yeast
  • 1 tsp (8 grams) salt
  • 4 cups (480 grams) flour

For the Filling:

  • 1 red pepper, finely diced
  • ½ yellow pepper, finely diced
  • 1 tomato, diced
  • 1 green tomato, diced
  • 6 green peppers, finely chopped
  • Optional: fresh parsley or dill, garlic, or grated cheese for extra flavor

Directions

  1. Activate the Yeast: In a large mixing bowl, combine warm milk, warm water, sugar, and dry yeast. Stir gently and let sit for 5–10 minutes until frothy.
  2. Knead the Dough: Add vegetable oil, salt, and 3 cups of flour. Stir, then gradually add remaining flour while kneading on a floured surface for 8–10 minutes until smooth and elastic.
  3. First Rise: Place dough in an oiled bowl, cover, and let rise in a warm place for 1–1.5 hours or until doubled in size.
  4. Prepare the Filling: Combine diced vegetables, season with salt and pepper, and mix well.
  5. Shape the Rolls: Punch down the dough and roll into a rectangle, about ¼-inch thick. Spread vegetable filling evenly, then roll the dough into a log. Slice into rolls about 1 inch thick.
  6. Second Rise: Arrange rolls on a parchment-lined baking sheet, cover, and let rise for 30 minutes.
  7. Bake: Preheat oven to 375°F (190°C). Brush tops with egg wash for shine. Bake for 30–35 minutes, until golden brown.
  8. Serve: Cool slightly before serving warm, plain or with dips like sour cream or tzatziki.
