Ingredients

For the Cake:

Granulated sugar 2 cups (14 ounces)
Large eggs, separated, room temperature 6
Lemon zest 2 tablespoons
Boyajian lemon oil (or extra lemon zest) 1 teaspoon or 2 extra tablespoons of zest
Poppy seeds (optional) 1 ½ teaspoons

For the Glaze:

Powdered sugar ⅔ cup
Fresh lemon juice 5-6 teaspoons

Directions

  1. Prep & Preheat: Preheat oven to 325°F (165°C). Spray a tube pan or Bundt pan with flour-added cooking spray.
  2. Mix Dry Ingredients: Combine cake flour, salt, and optional poppy seeds in a bowl. Set aside.
  3. Cream Butter & Sugar: In a stand mixer, beat butter, cream cheese, and sugar for 5–8 minutes, scraping down the bowl occasionally. Add egg yolks and beat for another 2 minutes. Mix in lemon zest and lemon oil.
  4. Combine Wet & Dry: Stir the flour mixture into the batter until just combined—do not overmix.
  5. Fold in Egg Whites: In a separate bowl, beat egg whites until soft peaks form. Gently fold into the batter. Pour mixture into the prepared pan.
  6. Bake: Bake for 60–80 minutes, or until a skewer inserted in the center comes out clean. Cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
  7. Make Glaze: Melt butter, then stir in powdered sugar. Add lemon juice one teaspoon at a time until desired consistency is reached.
  8. Glaze & Serve: Drizzle glaze over the cooled cake and serve.
