Smoked BBQ Chicken

Ingredients

  • 1 whole chicken (about 3–4 lbs) or 6–8 chicken pieces
  • 3 tbsp olive oil
  • 2 tbsp smoked paprika
  • 2 tbsp brown sugar
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp chili powder (optional for spice)
  • Salt and black pepper to taste
  • 1 cup your favorite BBQ sauce
  • Wood chips for smoking (hickory, apple, or mesquite work well)

Instructions

  1. Preheat your smoker or grill to 225–250°F (107–121°C).
  2. In a small bowl, mix olive oil, smoked paprika, brown sugar, garlic powder, onion powder, chili powder, salt, and black pepper.
  3. Rub the mixture generously over the chicken, coating all sides.
  4. Place the chicken on the smoker or grill with indirect heat. Add soaked wood chips for a smoky flavor.
  5. Smoke the chicken for 2.5–3 hours, or until it reaches an internal temperature of 165°F (74°C).
  6. Brush BBQ sauce over the chicken during the last 20 minutes of cooking to create a sticky glaze.
  7. Remove from the smoker and let rest for 10 minutes before serving.
